My favorite cinnamon apple roll (cake)

October is apple harvest time and this cake is perfect for those slightly ugly apples or apples that nobody would eat because they might contain a worm.

At this time of the year we have a lot of apples this recipe uses a bit of dough and many apples. It's a delicious cinnamon apple role.

You need for the dough:

The dough recipe does not have to be very precise. The amount of flower that you need is quite "flexible" and you can adjust it to the size of the dough that you will need to wrap the amount of apples you have.

You need for the filling:


Wash, and cut the apples. You want to remove any worm damage and take out the core. You don't need to peel the apples. Apples with worm damage are different from moldy apples. Mold affect a big portion of the apple even if it is only visible in one area. Worms live in the apple and they have no interest that the apple goes bad. It would destroy their house and they eat the apple too.

If you don't spray your apple trees with poisons in spring then you will have worms in some of the apples. They are still perfect for cakes and they taste very good.

After cutting the apples you put them in a pan with a bit of water and you cook them in the steam them until they are just slightly soft (not mushy).

Roll the dough on the table into the shape of a towel and put a parchment paper under about half of the "towel" to allow for easier transfer into the baking form. I use a lasagna pan.

Cover half of the dough with a mixture of sugar, Nesquik chocolate powder and ground cinnamon. The layer should be at least 1/4 inch high and you can vary the percentages to taste. On top you put a few rolled oats. They will absorb some of the liquid from the apples.

Put the content of the pan (apples and water) into a strainer to remove the water. You can drink it. It's now fresh apple juice. Just wait until the liquid is cold before you drink it.

Put all the apple onto the area with the sugar, chocolate, cinnamon and then roll it up.

Bake it for about 30min. Basically you need to wait until the dough is ready. The apples are already half cooked.
